Length: Six weeks
This program will explore the environmental, economic, and socio-cultural aspects of sustainability, gastronomic tourism, and ecological production of staple products in Spain and Portugal, featuring organic products of the region such as wine, olive oil, cheese, cured meats, and honey. It will allow students to learn about sustainability and cultural heritage through a number of disciplines, including Psychology and Spanish Language. The program will have a heavy field-study component, which will allow students to visit local organizations, farms, and vineyards, as well as a winery in Toro and/or Portugal.
